College Girl Meal Planning

As a single college girl, I just don't see the point in cooking a fabulous dinner for myself each night. Upon arriving home at 8 pm, I would rather eat some popcorn and applesauce than cook a real meal. Not to mention, recipes are almost always meant to feed a family of four.

Bloggers from around the universe told me that if I'd only meal plan, all of my problems would be solved and KA-POW! I would be insta-healthy! insta-wealthy! I tried to meal plan- I really did. But, despite the fridge full of ingredients and directions hanging on the fridge, I still lacked motivation to actually carry out the meal plan come 8 pm.

Enter Super Cooking Fiesta. Here's the rundown:

  • Cook a whole bunch one day and don't cook again for 2 weeks.
  • Because planning 2 weeks of different meals overwhelms me, I instead pick 3-4 family sized recipes, portion them into individual servings, and eat for days.
  • Then I mix this with some hearty salads and healthy snacks .
  • I pre-portion everything, including snacks, so that in the morning I can grab and go.
  • Pre-portioning also means I eat everything I buy rather than things getting lost in the depths of fridgedom where fungi attacks.
  • To prep food for 2 weeks takes me around 4 hours and costs around $50 (And if you are a better planner, you could probably do it faster and cheaper).


The Execution of Super Cooking Fiesta:

1. Make your list. My planning for 2 weeks looks like this:

  • Pick 3-4 lunch/dinner recipes that will make 3-4 servings each
  • Pick 3-4 green salad recipes that will make 2-3 servings of each
  • Pick 4-5 different snack ideas and make 4-5 servings of each
  • I also make 12 breakfast burritos and freeze them for breakfasts on the go

  • 2. Go to the grocery store and purchase the items on your list. 

    3. Bring home said items and put them all on the kitchen table so your roommates have nowhere to eat or sit or study


    4. Find the thing that will take the longest to cook and start cooking it. In my case, that was quinoa. I love quinoa because it holds its texture even after days in the fridge. 

    Maybe quinoa doesn't make for great pictures. I love it anyway.

    5. While the quinoa cooks, start chopping. Chop everything that needs chopped.


    6. When things are chopped and your quinoa is cooked, assemble your main meals (the lunch/dinner recipes).

    Once fully assembled, I usually let mine cool and then put individual portions in ziploc bags, because ziploc bags can squish closer together than Tupperware, and fridge-squishing is an essential technique of roommate living.

    7. Assemble your salad recipes. This week I only made two types because I also made a green bean salad. I make all my salads in jars - they last a full 10 days without wilting!  

    Greek Salad - Olive Oil, Pepper, Feta, Olives, Red Onions, Tomatoes, Quinoa, Lettuce
    Peach Avocado Salad - Peach Salsa, Chopped Avocado, Olives, Black Beans, Lettuce

    8. Using your remaining chopped veggies, assemble your snacks. I like to pair a fruit or veggie with some protein. These do get stored in Tupperware for dipping ease. Some of my favorite combinations:
    • Mixed veggies with hummus
    • Peaches and cottage cheese
    • Applesauce and string cheese
    • Apples + celery with peanut butter


    9. Enjoy grab-and-go eating for the next two weeks.

    A few days later, when you've regained your cooking strength, you should make these fabulous pumpkin scones. You probably even have everything you need in your pantry.

    Rays of Sunshine

    It's been awhile since I had anything to say, so here are some highlights from June.

    First off, we sent Sister M on a crazy adventure to the Philippines. I now eagerly await her letters each week. If you want to get her letters, let me know and I'll add you the email list or the blog. You should probably send her a letter too, now that you have her address and all.



    Next up, my little tiny garden. Purchased with birthday money, delivering joy all summer. I can't wait to have delicious tomatoes (and cucumbers and green beans!) to eat. 


    The "beach". Though it be but a reservoir, its beachyness will do for now.

    And this adorable little family. I spotted them in the distance (picture 1) and had to frantically change out my lens while standing on a rock surrounded by water to get the second picture, but it was all worth it in the end. No one tell my dad I attempted such a feat.



    How can this guy not brighten your day? He lets me dress him up in ridiculous hats, unlike any dog I've ever known. And for that, I thank him.



    And for any of you assuming all I do is stalk ducks and read letters, here's a glimpse into the hard working side of me - oxidized silicon nitride. Try to contain your excitement! (but really, it's pretty cool).

    Free Food Birthdays

    I come to you today with a quick (but long) post about birthday clubs. I've never really been into birthday clubs but recently one of my friends bought one of those Entertainment books with a million coupons and ever since I've been addicted to coupons.
    *NOTE: Not in the Extreme Couponers stashing sort of way. More of a "check and see if we have a coupon for this place, thing, etc" sort of way.

    Well I realized most places have birthday clubs - where you get free stuff on your birthday if you sign up ahead of time. On top of that, before M flies away to Philippines for a while, she's coming to visit me because:


    • She's going stir crazy back home
    • To celebrate finishing finals
    • It's her LAST vacation before she goes on her mission
    • Our birthdays happen to be two days in a row so we have extra reasons to party!
    Since her birthday is the day after mine, I decided this birthday club deal was a great way for both of us to eat delicious free food while she's here (Read: I get out of cooking and we both get free Blizzards).

    So I sat down and started looking up my favorite places to eat. Signed up for their online newsletters, which includes free birthday food!! It got a little out of control and I ended up signing up for 41 birthday clubs. I filtered through the ones that actually sent me good deals and the one that sent me dumb ones (like bring 5 friends get free food) and sent the following list to M, so we can dine in style on the cheap while she's here!

    Here's the $97 worth of coupons I printed today - and my birthday's still a week away! 

    And here's the list I sent M. I'll update them as a get my birthday email from other places as well. For most places you have to sign up for their newsletter, meaning you get all their emails about specials, etc.  I started getting actual birthday coupons the first day of the month, and got most of them 7 days before my birthday. Don't forget to check your junk email to find them.

    Spring Break Sunshine

    In a very unusual turn of events, spring break in Idaho was actually nice this year! Temperatures reaching 75 degrees and sunshine - usually unheard of here until May. I hear it actually rained the first weekend, but luckily I escaped to the warmer weather of Las Vegas.

    First and most importantly - good friends. We all planned to be here this weekend separately and ended up getting to see each other! This was my favorite part of the whole trip- I love these people!

    Adventures in Homemaking

    I'm actually proud of how many of my 2013 goals I've started to accomplish. For instance:

    • I decided on a direction (for now). Turns out I love biology. But I have an engineering degree. In an effort to combine the two, I've decided to stay an extra semester and take a little extra biology, then apply to bioengineering grad programs. Preferably somewhere warm :)
    But mostly, I've been learning to live on less. 

    Step 1: Discover the magic of coconut oil from a strange woman at Whole Foods

    Here's the deal. At 22 years old, I have acne like I'm 15. 
    One day I was pursuing the facial cleanser aisle at our new Whole Foods and a lady walked up to me and said (I kid you not), "Hey, I don't want to offend you, but it looks like you're pretty old to have acne like that."
    Who says that?! Am I right?

    Turns out she wanted to help me. She suggested I used raw honey as a cleanser, apple cider vinegar as a toner, and coconut oil as a moisturizer. 
    I'm not below taking advice from strange women at the grocery store, so I marched to the coconut oil aisle and bought this beauty for about $5.

    Then I came home and googled it just to make sure she wasn't totally crazy. She wasn't. 

    That night I slathered honey all over my face and left it there for about 20 minutes. Then I slathered watered-down apple cider vinegar all over my face. 

    I finished with the coconut oil for a moisturizer, and seriously, it was amazing
    It sounds terrifying to rub oil all over your face, but it perfectly balances my face's natural oils. I never feel oily; I never feel dry. It dissolves away all the dirt in my pores. It's perfect. And this $5 jar will easily last me a year.

    I found the honey irritates my skin if I use it too often, so I use it once or twice a week and use Cetaphil and coconut oil the other days. I only use apple cider vinegar every other night before bed, and I dilute it with water so it doesn't irritate my skin.

    Step 2: Make your own laundry soap
    I ran out of laundry soap and was tired of clothes coming out dingy because I always buy cheap detergent. So I jumped on Pinterest (where else?!) and found this recipe for homemade detergent

    Homemade Laundry Detergent (Powder)
    • 1 box Borax
    • 1 box Washing Soda
    • 1 box Baking Soda
    • 3 bars Kirks Coco Castille Soap, grated
    • 2 tubs Oxyclean (from the dollar store, it works the same as the real stuff)
    I found all of this at Walmart for about $15. Then I mixed it all together in a big bucket from Lowes. This recipe filled a 5 gallon bucket about halfway. Then, because I'm in love with glass jars, I poured some of it into a lovely glass jar. I just used the scoop from the Oxyclean.

    Voila! I seriously love it. It only takes 2-3 Tbs. per load and will last me forever. I actually did the math and it will last me around 300 loads, which is forever for a single college girl.

    Step 3: Homemade beauty

    I already talked about coconut oil, which is my all-time favorite "homemade" beauty product, but here's a couple of my other favorite beautifications straight out of my kitchen. 

    Olive Oil and Salt Exfoliating/Moisturizing Scrub: 
    I'm sure you know about this, but mix some olive oil with some salt and rub that all over your hands and feet. It feels amazing.

    Orange Juice and Baking Soda Pore Reducer: 
    Mix fresh orange juice with baking soda in equal proportions. Slather on your face. Leave for 10-20 minutes. Wash off. 
    This is a little strong for sensitive faces, but I do once or twice a week and see a difference in pore size and blackheads.

    Lemon and Honey Spot Treatment:
    When I have especially troublesome acne spots, I add a bit of lemon to the honey and leave it on as long as I can. It definitely helps spots go away faster, but can really dry out your skin if you do it too often. 

    I'm pretty amazed by how well things in nature can fix my problems after spending years thinking the right antibiotic or fancy cream would rid me of my acne forever. Not to mention these are way less expensive. Hooray for nature!

    Speaking of nature, is anyone else itching with spring fever?
    Last week I spent an afternoon hiking in the rain, pretending it was a nice summer day. It was so nice to be outside! I can't wait until camping weather is upon us once again.

    Adventuresome

    I've been pretty dang lucky this January to get to do a little bit of travelling with great friends.

    The first weekend of January, this sleepy guy and I road-tripped down to Salt Lake City. We ventured to Spanish Fork to visit his entertaining and quite-likable family, and even got to sit in on the CTR 6 class Sunday.

    From there we wandered north, where we visited the BYU-goers and my incredibly-hospitable family fed us a delicious dinner despite us showing up without warning. A trip through the canyon took us to Park City. An old friend wined and dined us at a cozy little restaurant where I discovered my new favorite cups (Adorable!). My generous family let us crash in their basement for the night.




     All good things must end, so we ventured back to Boise, where we were greeted by this lovely blizzard and I actually went to work for a day or two.


    After a terrifying drive from Boise to Idaho Falls and some anxiety about whether my flight would actually make it out of the blizzard, I landed in "warm" LA and immediately headed to the beach. After about a half hour of running around in my summer clothes, I realized everyone else nearby had on winter coats and I put on a jacket to avoid looking blatantly tourist-y.





    I was once again reunited with a great old friend, who led me up a beautiful hike with a beautiful view, where I tried out the panorama feature of my phone and watched the sun set over the ocean.




    After three wonderful days in the sun and some bad traffic, a plane deposited me back in Idaho Falls, where it was so cold the kids all got a snow day.


    The Dream Team met me in Idaho Falls, where we spent two days learning about nickel-alloys and creep tests at INL. A hotel front desk man made me hot chocolate and we tested the distance from which the car's remote-start will work. Despite there being so much to see and do in good ol' IF, we eventually hopped back in our Boise State vehicle and ended up back in Boise, with just enough time to fit in some more work before school starts next week. 

    What a fun couple weeks! How lucky I am to get have such great friends and great adventures.

    This year, I will:
    1. Live on less
